- 1 1/4 lb lean ground turkey
- 1/2 yellow onion, diced
- 1/2 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 3 cups baby organic spinach
- 1 cup shredded cheddar cheese
- up to 1/2 cup water
Brown ground turkey and add onion until translucent. Drain excess fat. Return ground turkey to pan. Add taco seasoning and diced tomatoes, along with enough water to keep consistency. Add spinach (it may seem like a lot, but it will wilt) until wilted. Top with shredded cheese and allow it to melt. Serve with lettuce bowls, guacamole and sour cream.
