Slow Cooker Chicken Chili with Quinoa and Sweet Potatoes



3 chicken breasts

1/2 onion, diced

2 medium size sweet potatoes, cubed

1 cup uncooked quinoa

2 cans Rotel diced tomatoes

1 can black beans, rinsed and drained

1 12 oz beer (I used Heineken, or sub chicken broth)

2 cups chicken broth

1 tbsp chili powder

2 tsp cumin

1 tsp garlic powder

salt and pepper to taste



Spray slow cooker with nonstick cooking spray.  Place chicken in the bottom of slow cooker.  Add rest of ingredients and stir.  Turn on slow cooker to high and cook for 4 hours.  Take out chicken and shred, then return them to slow cooker and mix them in.  Yes, it’s that easy!  Serve with fresh cilantro, shredded cheese, sour cream, avocado and tortilla chips.  Yum!
