Easy Slow Cooker Chicken with Tomatoes and Basil



  • 3 frozen chicken breasts, boneless/skinless
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil
  • 2 cups chopped tomatoes
  • 4 tsp garlic, minced
  • 1/2 cup basil, chopped
  • Parmesan cheese, shredded (optional)


Spray slow cooker with non-stick spray and place chicken breast in the bottom.  Add chicken broth, garlic, salt and pepper and cook on low for 3 hours.  Then add chopped tomatoes and continue cooking another hour.  Serve over brown rice with fresh basil and Parmesan cheese, if desired.
