Warm Brussel Sprout Salad with Maple Walnut Dressing



For Dressing:
    • 4 Tbsp Extra Virgin Olive Oil
    • 2 Tbsp diced onion
    • 1/2 C Walnuts, toasted
    • 4 T lemon juice
    • 2 Tbsp fresh chives
    • 1 teaspoon maple syrup (I used sugar free)
    • 1 tablespoon Dijon mustard
    • Salt/pepper, to taste
For the salad
  • 1 pound Brussels Sprouts, shaved
  • ½ Red onion, thinly sliced


  1. Prepare vinaigrette. Set aside. Combine shaved sprouts and red onion. Toss all ingredients in a large bowl to combine. Season to taste with salt and pepper.
