Quinoa with Sausage and Peppers

Ingredients

1 cup quinoa
3 tbsp apple cider vinegar
2 tablespoons stone-ground mustard
2 teaspoons honey
2 medium yellow, green, and/or sweet red peppers, cut into bite-size pieces
1/4 cup onion, diced
1 lb ground mild Italian turkey sausage
1 cup shredded cheddar cheese

Directions

  1. Prepare quinoa according to package and set aside.
  2. Brown mild Italian turkey sausage.  Drain fat and return it to skillet.
  3. Add quinoa, vinegar, mustard, honey, peppers and onion.
  4. Cook on medium high heat, stirring frequently for about 5 minutes or until vegetables are crisp tender.
