Cheesy Cabbage Casserole

Ingredients

  • 2 cups pork rinds, crushed
  • 4-1/2 cups shredded cabbage
  • 1/4 cup diced onion
  • 1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
  • 1 cup skim milk
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • salt and pepper to taste

Directions

  • 1. In a baking dish, layer with cabbage, onion, salt and pepper. In a large bowl, combine the soup, milk and mayonnaise until smooth. Spoon over top; sprinkle with cheese and pork rinds. Lightly spray non-stick cooking spray over pork rinds.  Bake, uncovered, at 375° for 35-40 minutes or until golden brown. Yield: 8-10 servings.
