Paleo Sloppy Joes

  • 1 lb ground beef (or ground turkey, ground chicken to lower fat content)
  • 6 Romaine lettuce leaves
  • 8 oz tomato sauce
  • 1/4 cup onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons chili powder
  • ¾ teaspoon mustard powder
  • salt and pepper, to taste
  1. In a medium skillet over medium heat, cook ground beef until brown. Drain off most of liquids.
  2. Add onion and garlic. Cook for 2-3 minutes.
  3. Stir in tomato sauce, and seasonings. Mix thoroughly and simmer for 8-10 minutes. Taste and adjust seasonings if desired.
  4. Spoon sloppy joe mixture in lettuce leaves and top with cheese.  I served mine with home made cole slaw, yummy!
