Loaded Cauliflower Casserole

Ingredients: 1 large head of cauliflower cut up into bite size pieces

                    8 strips of bacon, cooked and crumbled

                    1/2 cup mayo

                    1/2 cup sour cream

                    2 cups Colby Jack cheese, shredded

                    salt and pepper to taste

                    chopped chives (optional)

Preheat oven to 425.  Boil cauliflower until tender (about 8-10 minutes).  Drain and let cool.  In large bowl, mix sour cream, mayo, half the bacon, 1 cup cheese, then add cauliflower.  Mix well and place in 9×13 casserole dish.  Sprinkle with rest of cheese, bacon crumbles and chives, if desired.  Bake for about 15 minutes. 

Tastes just like a loaded baked potato, yum!!Image
