Potato salad is a comfort food for me. I thought, why not substitute cauliflower to my favorite traditional recipe and see what happens? Even my kids gobbled this down!
Take 1/2 head of cauliflower and steam until firm-tender. Chop it up and place in a large bowl. Add 4 chopped hard boiled eggs, 1/4 cup mayo, 1/4 cup sour cream, 1/2 tbsp Splenda, 1 tbsp mustard, 1/4 cup sweet relish (or diced baby dills if you want to cut more carbs), salt and pepper to taste. Mix together, then chill. Season with dill or paprika if desired.
