In a large bowl, mix 2 lbs lean ground beef, 2 eggs, 1 tsp chili powder, 1/2 tsp cumin, 1/2 tsp salt and 2 cloves minced garlic. Spray meatloaf pan with nonstick spray. Place half meat mixture in pan to form a ‘boat.’ In the boat, put 1/2 cup mexican shredded cheese and half of a 7 oz can diced chile peppers. Place the other half of the meat mixture on top pressing down until smooth. Top with 1/2 cup mexican shredded cheese, the other half can diced chile peppers and 1/4 cup sour cream. Bake at 400 degrees for 45 minutes.
