Grate 1 lb zucchini and squeeze in paper towels to release as much moisture as possible. Spread zucchini on fresh paper towel and sprinkle with salt. Let it sit for about 30 minutes to release more moisture, then squeeze again. In a bowl, mix 1/4 cup parmesan cheese, 2 eggs, 2 chopped green onions, 3 cloves diced garlic, 4 chopped basil leaves, 1/4 tsp nutmeg and pepper to taste. Add zucchini, stir to combine. Heat oil of choice in a frying pan over medium heat. Form mixture into golf ball size patties and place in hot frying pan. Fry until brown, approximately 2-3 minutes per side.
