Terrific Turkey Meatballs


In a bowl, mix 1 1/2 lbs ground turkey (I used 97% fat free), one large egg, 2 tbsp grated parmesan cheese, 1tsp pepper, lots of fresh basil, I used about 10 leaves, chopped, 1 tsp salt, 1 clove garlic, minced, 1/4 cup minced onion.  Form into small balls.  Heat oil of choice (I used olive) in a medium frying pan. Once oil is hot, place in meatballs, cooking until they are brown on all sides.  Place meatballs on a plate covered with a few paper towels if you’d like some of the oil to be absorbed.  Eat alone, with tomato sauce or with my delightful white sauce – in a sauce pan, melt 8 oz cream cheese, add 1/2 cup grated parmesan and 1/2 tsp garlic powder, amazing!
