Spray muffin pan with nonstick cooking spray. Fill each cup 1/4 way full with chopped green peppers and chopped green onions, sprinkle each with a little crumbled feta cheese, then pour in 1/3 cup liquid egg whites in each. Season with Mrs. Dash Southwestern Chipotle Seasoning and top each with a slice of tomato. Bake at 375 for 40 minutes. Recipe freezes and reheats very well.
