Classic Mashed Cauliflower (Faux-tatoes!)

Chop cauliflower in chunks, then boil until tender. Drain well and place in food processor, add 2 tbsp olive oil or butter, 1 – 2 tbsp milk of choice or heavy cream and salt to taste. Blend until smooth. Serve immediately.
