Eggplant Pizza

Slice eggplant 3/4″ thick, place slices on a baking sheet, brush with oil of choice (I used olive), sprinkle lightly with italian seasoning and bake 20-25 minutes at 375. Take eggplant out of oven, set broiler on low. Put toppings on eggplant (I used tomato sauce, mozzarella cheese and mini pepperonis. Place back in oven until cheese is melted.
